Pesty Wadoo asked:

Is Azekas market still in Kihei on Maui?They had the best short ribs. And this other place, it was a little store that sold cooked stir fried noodles-I think It was called Suda store. This was back in 1982.Anyone know if they re still there?

    I am on my way there (to Maui) for the first time on Monday!

    Maybe I will remember to look those places up.

    A friend of mine that was born there says that there are not many independent places left.

    “The marinade recipe reproduced herewith was obtained from Mama-San Azeka direct and lists different ingredients than you penned. To wit:

    ufxrecipehedMAMA-SAN AZEKA’S RIBS

    Serves six

    * 5 pounds beef short ribs
    * 3/4 cup shoyu (soy sauce)
    * 1/3 cup dark sesame oil
    * 1/4 cup white sugar
    * 3 green onions, chopped (Maui onions, of course)
    * 1 tablespoon minced fresh garlic 1 tablespoon thinly sliced fresh ginger root

    “Combine the final six ingredients and soak the ribs in this prescription for a minimum of 24 hours and then grill and serve with a side of rice sloshed down with Primo Beer.

    “As an aside,” the Whidbey cook added, “the Azeka marinade is not imported into the continental 49 for some reason known only to the FDA. However, the Azekas have granted a license to produce their product to Albion Fisheries Ltd., 1077 Great Northern Way, Vancouver, B.C., Canada V5T 1E1. It comes in bottles titled, ‘The Original Maui Ribs Marinade/Sauce.’ It is available in most Canadian supermarkets.

    “The next time you are over the border, pick some up and drive the customs guys crazy.”

    Before Captain Vancouver and the Intermediate Eater discovered Maui, I thought the greatest barbecued ribs in the world were those cooked by a noted Seattle cook named Paul Swensson. Once again, the essential ingredients are soy sauce, garlic and ginger, but the local chef added orange marmalade with excellent results.
